Being sick this time of year is terrible, especially when the days are so beautiful but all you want to do is lay in bed & sleep. A warm piece of comfort food helps when you're feeling a little under the weather. My mom has been making this for my brother & I for years, so it's safe to say this made me feel a tad bit better. I told you guys earlier on Instagram that I would share this recipe with you, so here it is! This is by far the best Apple Crisp recipe around. It pairs nicely with some ice-cream!
1 cup all-purpose flour
3/4 cup oats
1 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
4 medium sized Macintosh apples (cored, peeled & sliced)
1/2 cup white sugar
1 tablespoon cornstarch
1/2 cup water
2 teaspoons vanilla extract
In a medium bowl, combine flour, oats, brown sugar, cinnamon & melted butter. Mix into a crumbly consistency. Press half of this mixture into a 9x13 inch coated baking pan. Cover mixture with sliced apples.
Pre-heat oven to 350 degrees F (175 degrees C)
In a medium sauce pan, combine white sugar, cornstarch, water & vanilla. Cook on medium heat, stirring until thick and clear. Pour over apples & oat mixture evenly. Cover with the remaining oat mixture.
Bake in pre-heated oven for 45 minutes. Serve either hot or cold, with vanilla ice-cream.
