Fall is in the air & so is the smell of baked apples & cinnamon. At least that's what it smells like in my house. This apple cinnamon crumble cookie is definitely a comfort treat that you all need to try.
I was hesitant at first making them with almond flour just because I haven't had much luck with almond flour, but its kind of perfect for a soft crumbly cookie. You can eat the cookie like you normally would but I wanted to dress mine with a little scoop of french vanilla ice cream, since they were fresh out of the oven. I also want to try them on some plain greek yogurt. Yum!
Start off by whisking together your dry ingredients. You will need:
1 cup instant oats
3/4 cup almond flour (or whole wheat flour)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/8 tsp of salt
1 tsp chia seeds
Next, you'll need to mix together your wet ingredients:
2 tbsp unsalted butter, melted
1 large egg, room temp
2 tsp vanilla extract
1/2 cup honey
Once your wet ingredients are thoroughly mixed, its time to start slowly adding in your dry ingredients. Make sure your dough is mixed well before adding in the last ingredient. Finely chop 1 apple & fold into the mixture.
Place your dough in the fridge for 20 minutes to set. This is a great time to clean up & preheat your oven to 325 degrees. After the 20 minutes are up, place balls of dough on a lined cookie sheet & bake for 13 minutes. I was able to get 15 cookies from this recipe.
Do not remove them from the pan until cooled for 20 minutes. These cookies are very soft & crumbly so waiting to remove them from the pan is crucial.
